Minecraft AI has gotten a huge improvement, they specifically hired someone who specializes in AI to come on and make new AI for mobs. For example mobs like zombies will run from light and into shade/water to survive, all mobs have pathfinding now and so on... however they can still be fairly stupid. The only thing you need to do to see how stupid they can be is to watch villagers overnight.
