Rpg games aren't always in literal terms role playing, MMORPG games( Which literally stands for massive multiplayer online role playing game) are an example. Most RPG games dont always involve literal roleplay with other people. Like Pokemon is a game where you catch Pokemon (Which is a rpg), Many games that have stat building and mostly combat is rpg. Just because games are labeled RPG doesn't mean it directly involves roleplaying. And considering classic doesn't allow heads or bodies to be completely based off something(Like the Kaneki heads, Ect) so it's pretty likely classic falls in those lines.
The only real reason we have Role Playing in games like classic is because classic lacks a lot of content. I mean there is basically not a single thing to do on a daily basis that is entertaining, which makes players have to do their own thing and create their own content and own entertainment. Even if that means doing extremely cringe things in the school.

I mean, there's a few things one can do. Varied bounties, bug catching, making houses, hoarding hats... graal is just a cosmetic sort of game atm. But that doesn't mean that it's dying
