iPod touch 2nd generation can only support up to iOS 4.2.1
Once jailbroken, several systems can be emulated at full speed, even on old hardware:

NES: NES4iphone or NES.emu
SNES: SNES.emu
Game Boy: gbc4iphone or GBC.emu
Game Boy Advance: GBA.emu

You could even emulate the Playstation with psx4all, although from past experience, it runs at around 2FPS on a second generation iPod touch. Many newer emulators like GBA4iOS or RetroArch require iOS 7 or above.
