Does the theme need to be christmas related? And by anything it would be nice of a list of stuff we could make, for example: furniture, hats, guns, horses, saddles, melees, etc.
Also say we made like 3 things that you guys used, would we get 15k and the items or only 5k and the items?

Just 5k, and I didn't list the things because you can make anything you want.
