Is it PvP or what? I mean, I'm not a big MMO fan so I kind of want to know what side of the scale this balances on. Is it grindy like an MMO? Boring quests? Very heavy on the RPG?
I suppose I can look up some gameplay or something...

The planets in which you travel are the shared worlds. I wouldn't even consider calling it an MMO, it has elements of an MMORPG but its not. The max amount of people in your world is up to like 16.
You cannot communicate with these people unless you invite them to a fire team which is annoying, but I can see the benefits.
The max amount of people you can have with you in a party of your own is 6, this is for 2 of the 5 PvP modes and for raids which release Tuesday and have a level suggest of 28(6?)
Otherwise the max amount of people you can have in your party is 3.
The way Bungie described their game is perfect. Its a shared world FPS. You run into ransoms along your way across the planets. You can choose to ignore them entirely, but sometimes missions bring you together such as public events or strikes (if you don't have 2 other friends on). When those things are done you go your ways and most likely never see that person again.
The game is Grindy if you want it to be. You can grind strikes for legendary armor and weapons, however you can also earn those in PvP which isn't as Grindy, but more random. Strikes got boring after doing them all twice. It becomes a more "hope I don't run out of ammo" rather than "hope I can beat this guy" you just spray till your clip is empty. Run and get ammo. Repeat. Only fun if you have f,riends with you to talk to. In fact the game is ONLY fun with friends. Playing this solo would suck imo
