The only shiny I've ever caught was a shiny Ho-oh in soulsilver after hundreds of attempts to fine one.

My first shiny was a Pidgey outside Pewter City. I raised him as my golden bird for the rest of the game <3. And I saw a shiny Scyther in the Safari Zone, but I failed to catch it. Those are my only two. Actually, I'm fairly sure I encountered another in Viridian Forest, but I couldn't catch it, so I've forgotten what it was.
