I've killed him in under 30 seconds on a 3 Heart Run. Not really all that epic. lol
His hearts basically match yours, and he's programmed to mimic your attacks if you're z-targetting him. But if you don't z-target and throw down some Deku Nuts, you can stun him over and over and just keep whacking him to death.

I've ran through Ocarina of Time so many times that I know about all the little parts that people usually get hung up on. There's actually three specific areas that give people trouble:
1. Inside the giant three-tier 'pillar' room where you play the Ocarina to raise the water level, there is a block that raises up too and reveals a secret room with a key in it that you absolutely need to make progress. If you don't pay attention during the cutscene when the water level is rising, it's easy to miss.
2. After the scene where you find Ruto, you have to float up and there's a wall with a fissure in it that shows a sliver of the room behind it. But you can't lay bombs while the water level is raised, so you have to come back later and bomb it open. Again, it's easy to miss, and you need to go there to make progress.
3. There's a room with a waterfall and boulders rolling down it, but in order to get up to where they're coming from you have to go around through a few more rooms. However, even when you get up there, you have a choice of going left to where the boulders are exiting, or down a secret shaft right below where the boulders are spawning. Again, another area that can be overlooked.
There's a lot of pretty cleverly hidden secrets throughout the whole dungeon, and lots of variation in architecture caused by the fact that the Water Temple is also connected to a cave system with streams and whirlpools and whatnot.
