So after the egg hunt is over, and the chicken is no longer given out, what happens to those eggs?
Do you get to keep them? Do they hatch and give you some presents like Christmas presents? Are they novelty items? And.. are they going to disappear next year like the egg trophy.
As well as that, is there going to be a constellation prize for those people who worked their butts off, but just didn't get all 50.

My status shows that the chicken mount is legit.

You get all 50 eggs, you trade the eggs in, you get a mystery egg, you use it, and then you get the chicken.

You won't be able to use your eggs after the egg hunt is over. The egg hunt is an event with a set purpose; if you don't complete your collection in the given time period then that is tough luck. Not completing your collection is not an achievement and won't be treated as such.
